If your traditionally whisked matcha has ever come out bitter, grainy, or just meh, you're not alone — and it's almost never your fault. Making a great traditional style matcha at home comes down to a few small things: good matcha, the right water temperature, and a proper whisk. Here's exactly how we do it at Dragon Girl Tea.
What you'll need
- Quality matcha. Smooth, vibrant-green matcha whisks up sweet and creamy; cheap, dull-green matcha tastes bitter no matter what you do. Our organic ceremonial grade matcha is stone-ground and naturally sweet with zero bitterness.
- A bamboo whisk (chasen) (or a small electric frother. for a 2nd option. More on this in our other blog post!) Either way, a spoon won't cut it. Grab a matcha set if you're starting out. (pro tip-don't use a plastic whisk!)
- Hot (not boiling) water and a mug or bowl.
Step by step
1. Cool your water
This is the #1 fix for bitterness. Boiling water scorches matcha. Aim for about 175°F (80°C) — if your kettle just boiled, let it sit for 2 minutes.
2. Sift and measure
Add ½ to 1 teaspoon of matcha to your bowl. Sifting it first breaks up clumps so you get a lump-free cup. Make sure its a flat teaspoon when you measure
3. Add approximately 2 ounces of water
Whisk briskly in a zig-zag "W" or "M" motion — not circles — for 30-60 seconds until a fine, foamy layer forms on top.
5. Sip and enjoy
That's it. Smooth, frothy, café-style matcha — no bitterness.
Why matcha turns bitter
Three usual suspects: water that's too hot, too much matcha powder, or low-grade matcha. Fix those three and bitterness disappears. Start with less matcha and cooler water, then adjust to taste.
Want it iced?
Whisk your paste with a little hot water first (matcha won't dissolve in cold water), then pour over a tall glass of ice with your favorite milk. Instant iced matcha latte.
